In the kitchen – Crispy white pudding and fig sweets

Ingredients: (serves 4)

  • 2 sheets of brick pastry
  • 8 slices of Tartin’ white pudding
  • 4 fresh figs
  • 4-spice tomato chutney (tomato compote, brown sugar and white wine).
  • Mixed salad
  • Pomegranate vinaigrette (with olive oil)
  • Fresh pomegranate

Steps :

  1. Preheat a skillet over medium heat.
  2. Roll out a sheet of brick pastry and brush lightly with melted butter.
  3. Cook 2 figs in a little butter until tender.
  4. Cut the brick pastry into 4 equal pieces.
  5. Place a slice of Tartin’ white pudding and a piece of fig confit on each piece of brick pastry.
  6. Form candies by folding over the sides of the brick pastry and sealing tightly.
  7. Sear the candies in the pan with a little butter, until golden and crisp.
  8. Prepare a salad with fresh figs cut into quarters, pomegranate seeds and pomegranate vinaigrette.
  9. Serve the candies warm with the 4-spice tomato chutney for dipping.
