CRISPY WHITE PUDDING AND FIG SWEETS

Ingredients: (serves 4)
- 2 sheets of brick pastry
 - 8 slices of Tartin’ white pudding
 - 4 fresh figs
 - 4-spice tomato chutney (tomato compote, brown sugar and white wine).
 - Mixed salad
 - Pomegranate vinaigrette (with olive oil)
 - Fresh pomegranate
 
Steps :
- Preheat a skillet over medium heat.
 - Roll out a sheet of brick pastry and brush lightly with melted butter.
 - Cook 2 figs in a little butter until tender.
 - Cut the brick pastry into 4 equal pieces.
 - Place a slice of Tartin’ white pudding and a piece of fig confit on each piece of brick pastry.
 - Form candies by folding over the sides of the brick pastry and sealing tightly.
 - Sear the candies in the pan with a little butter, until golden and crisp.
 - Prepare a salad with fresh figs cut into quarters, pomegranate seeds and pomegranate vinaigrette.
 - Serve the candies warm with the 4-spice tomato chutney for dipping.
